Most of the time the things I bake are strictly planned. I gather my ideas, put them together and mix them between each other. But sometimes the craving for something sweet, easy and simple is much stronger than the will to make the perfect dessert. And then recipes like this come oh so handy.
This banana bread has everything you could expect from it and, perhaps, more. It`s nice and moist, has loads of Nutella in it and some salted peanuts that give it the perfect taste balance and a nice crunch. Love love love...!

Makes 2 loaves
You will need:
3 large (or 4 medium) ripe bananas
1 cup brown sugar
115 g butter
1/2 cup milk
2 large eggs
1 tbsp. vanilla extract
3 cups flour
2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 cup Nutella
A handful of roasted and salted peanuts
Preheat the oven to 180 C.
So first of all, mash the bananas using a fork, so there are still some small bits left. Melt the butter and leave it to cool for a bit. And at that time sift together flour, baking soda and baking powder. Place the Nutella in a bowl and microwave for about 30-50 sec. until nice and smooth.
Then, with a mixer, beat the eggs, melted butter, milk, vanilla extract and sugar until smooth. Then add in the dry ingredients and beat until combined. Add the mashed bananas and mix again for a few seconds. Then add 2/3 of Nutella and gently fold with a spatula just a few times to create some swirls in the batter.
Divide the batter into two pans lined with baking paper. Make sure you're careful and not mixing it too much so you don`t lose those swirls. Add the rest of your Nutella on top and mix it a little bit with a long knife, sprinkle some peanuts and bake the loaves for about 45-50 min.
